Pancake Master Mix Homemade

Saturday mornings are for pancakes! Get those hot cakes on the griddle faster by having pancake mix ready and waiting for you.  No need to get flour all over the place, or dirty a bunch of dishes. Scoop some ready-made pancake mix into a bowl, crack an egg, add some milk, and you’re ready to start cooking! Cheese Biscuit Top

   Peheat oven at 350 degrees In a bowl put 1 1/2 c of Biscuit Mix (I doubled mine) 6 TBSP milk Mix together until moistened. Take a small amount out and roll out with rolling pin and extra Biscuit Mix to roll on rolling pin and under the ball of moistened mix. Take a cutter (Mom always used a glass cup/I used a 2.5" for a larger biscuit). Take 1/2 c cheese/shredded cheese/I didn't have any so I used Parmesan cheese. I sprinkled a tiny amount of milk on top so my powdered Parmesan cheese would stick to it. Put onto ungreased baking sheet. Bake this for 20 min then eat fresh from the oven with or without butter. Extra biscuits can be frozen and pulled out of the freezer to warm up and eat later. Variations: Can use this biscuit mix or an English Muffin and make a small pizza. Add 1 TBSP leftover Spaghetti Sauce/Salsa/etc. Spread over the unbaked rolled biscuit or an English Muffin. Put leftover meats/bacon/small pieces of cut hot dogs on top. Bisquick Pudding Cookies

Bisquick and Pudding (1 - 3.5 oz instant pudding mix) makes a fast, easy cookie. Butterscotch (+ 1 c butterscotch chips) and chocolate pudding (1 + chocolate chips)makes a good cookie. Makes 36 cookies. 1 - 3.5 oz instant pudding (vanilla, butterscothch, chocolate) 1 c Bisquik mix 1/4 c vegetable oil (or margarine) 1 large egg 1 c semi-sweet chocolate chips (or butterscotch chips, peanut butter chips, etc.) Preheat oven to 350 degrees. In a large bowl mix together Bisquick and Puddin mix. Stir in oil, egg, together until forms a soft ball. Bisquit Muffins

3 c Basic Baking Mix 2 TBSP sugar 1 c water 1 egg Preheat oven to 425 degrees. Mix together wet ingredients in 1 bowl and the dry ingredients in another bowl. Stir together wet and the dry ingredients to moisten. Pour into muffin tins and bake around 20 min till cooked. Take out of the tins. Let cool.

Biscuit Pancakes

 2 c Biscuit mix 1 egg 1 c water Blend together mix, egg, water. Pour 1/4 c mixture into slightly greased hot griddle. Cook until bubbles and edges look dry. Flip and cook otherside 1-2 min. Makes 12-15 pancakes. Can freeze and pull out so fast, quick meal. Variation:  Can use the above recipe and pour it into small greased waffle trays and bake at 400 degrees to light brown for around 10 + min. Take it out of trays then Freeze and pull out later for instant waffles for a quick dinner.

Filled Biscuits

2 c Basic Baking Mix 2/3 c milk 2 TBSP melted Country Butter--(1 lb softened margarine; 1 c corn oil; 1 c buttermilk--Whip together in food processor or use an electric mixer; store in fridge will last 1 month; reduce corn oil if need to) 1/2 c chopped vegetables; tuna or some other meat Use same baking instructions above as rolled biscuits. Put 1 circle on bottom; put vegetables and meat on tip of circle; Put another rolled circle ontop of vegetables and meat. Pinch the 2 rolled biscuits together with a small amount of milk to seal.  Variation:  1 small onion chopped up; bacon and fry together until onion transparent not crispy bacon. Bake with a top or bake without a top similiar to the above filled biscuit. Preheat oven to 400 degrees. Mix together mix and milk until smooth. If too sticky add more mix. Sweet Biscuits

  2 c  Basic Baking Mix   2/3 c milk 1/4 c Cinnamon Sugar (2 c sugar; 5 TBSP Cinnamon) Mix together put into shakers and sprinkle ontop. Lasts 6 months. Can be sprinkled ontop of oatmeal, toast, whipped cream on top of coffee-hot chocolate, french toast, tea, puddings, ice cream, yogurt, jelly, fruit pie, pumpkin pie Variation:  Reduce 1 TBSP Cinnamon and add 1 TBSP Nutmeg or Allspice) Preheat oven to 400 degrees. Mix together mix and milk until smooth. If too sticky add more mix. Turn out dough onto a floured surface, knead gently 10 x's, roll out 1/2" thick and cut out 2" +    circles/squares. Place on ungreased cookie sheets, brush or sprinkle with milk to brown, bake 8 to 10 min. Variation:  Honey-Cinnamon (2 TBSP honey add 1 tsp cinnamon and mix together. Spread ontop of your buttered biscuit for a healthy biscuick)

Biscuit Mix

    You can double, triple the recipe. It keeps well in the pantry. You can finish off a vegetable, meal by sprinkling a few tsp of the mix on top before baking--it will sink to the bottom and form a soft pie crust. Many ways to use this mix are listed below. 10 c flour 1/3 c baking powder 1 TBSP salt 2 c shortening (lard) 1. Sift or mix dry ingredients together in a large bowl. With 2 knives or a pastry blender, or a food processor, add shortening (lard) in spoonfuls and cut in until this mixture is the texture of coarse cormeal. If using a food processor start and stop often during processing and watch closely. (I used the knives made it smaller than with clean hands used my hands to mix, squeeze and make the lumps smaller in the mixture.) 2. Keep the mixture stored, labeled in tightly closed container.
